Dark Leafy Greens are probably the most concentrated source of nutrition of any food.
The darker the greens are, the richer they are in nutrition. Dark leafy greens are a rich source of minerals, such as Iron, Calcium, Potassium, Folic Acid and Magnesium. They also provide a variety of Vitamins such as A, K, C, E, and many of the B. They are highly praised for their antioxidants and also offer a variety of phytonutrients as well as some Omega 3’s. The phytonutrients include beta-carotene, lutein and zeaxanthin, which protect our cells from damage and our eyes from degeneration and cataracts.
The addition of dark leafy greens creates a very nutritionally impressive meal. Such greens include: romaine, Cabbage, Parsley, Spinach, Collards, Turnip Greens, Mustard Greens, Kale, Arugula, Bok Choy and Swiss Chard.
