Dark Leafy Greens

Dark Leafy Greens are probably the most concentrated source of nutrition of any food.

The darker the greens are, the richer they are in nutrition. Dark leafy greens are a rich source of minerals, such as Iron, Calcium, Potassium, Folic Acid and Magnesium. They also provide a variety of Vitamins such as A, K, C, E, and many of the B. They are highly praised for their antioxidants and also offer a variety of phytonutrients as well as some Omega 3’s. The phytonutrients include beta-carotenelutein and zeaxanthin, which protect our cells from damage and our eyes from degeneration and cataracts.

The addition of dark leafy greens creates a very nutritionally impressive meal. Such greens include: romaine, Cabbage, Parsley, Spinach, Collards, Turnip Greens, Mustard Greens, Kale, Arugula, Bok Choy and Swiss Chard.
