Pineapple Sweet Potato Muffins

Set Oven temperature at 375 degrees.


1 cup cooked & pureed sweet potatoes
1 can crushed pineapple [8 0z.]
1 tsp orange zest
2 eggs
2/3 cup sugar
½ cup walnuts
2 cups flour
1 TBSP baking powder
1 tsp baking soda
½ tsp salt

Mix wet ingredients and sugar together. Add walnuts. Mix dry ingredients together and then add to the wet ingredients. Pour into greased muffin tins.

Cook for 12-15 minutes or until knife comes out clean.
