Crockpot Refried Beans

  • 2 cups dried beans
  • 1 onion, chopped
  • salt, pepper, cumin, garlic
  • olive oil
  • enough water to be 1-2 inches above beans

Cook beans, onion, seasonings and water in a crockpot overnight on low/med. Or, cook first thing in the morning on med/high. If on high, check and stir often, adding water as needed.

When beans are soft, scoop out of the crockpot into a bowl with a slotted spoon. Add a good splash of olive oil, some more seasonings to taste and mash with a potato masher. To reach desired consistency, add a little of the water left in the crockpot as needed.
