Ingredients:
- 1 Can Black Beans
- 1 Can Corn
- 1 Onion, chopped
- 1 Tomato (or more), chopped
- Cilantro, chopped
- Balsamic Vinaigrette dressing
Mix cans of beans and corn. Add onion, tomatoes and cilantro to taste.
Dress with a balsamic vinaigrette dressing.
Options:
- Replace tomato and onion with a can of Rotel tomato and chilies.
- Use your favorite dressing or heart healthy olive oil & vinegar.
- Use basil instead of cilantro.
